Maybe even sneak a little oatmeal in there ;)Annhttps://www.blogger.com/profile/11830621950784886981noreply@blogger.comtag:blogger.com,1999:blog-5318432618768960668.post-15901949099107933562009-12-30T11:42:27.391-05:002009-12-30T11:42:27.391-05:00Oh good call Bridget! Thanks!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-5318432618768960668.post-13500324607770121212009-02-11T15:53:00.000-05:002009-02-11T15:53:00.000-05:00I just made this, although my version wasn't quite...I just made this, although my version wasn't quite so low fat. I didn't have applesauce, so I substituted 2 tablespoons softened butter for it. I also added 1/4 teaspoon salt. I creamed the butter and sugar together, added the egg and vanilla, then the bananas, and then mixed in the dry ingredients just until combined. Oh, and I added about 1/4 cup toasted walnuts.

Anyway...it was good! And even with doubling the butter, it still has half the fat of most banana bread recipes.

I made muffins, and they got a little too dark before the centers set, so 325 degrees would probably have worked better for me.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-5318432618768960668.post-31686655109754139272008-08-28T09:06:00.000-04:002008-08-28T09:06:00.000-04:00Great recipe.
